The composition of a dish can be compared to the preparation of a suit of clothes designed for the
numerous desires of those who have the pleasure of enjoying it: what both have in common are the
care, emotion and often the originality which go onto their creation. The chef, just like an expert
“couturier of taste”, composes his/her dishes with an idea in mind of the pleasure of those who taste
them: Gianluca Bigero intends making up his culinary experience with the new colours, fragrances
and shapes encountered during his experiences as a chef in the East. Without however neglecting
the international cuisine at 360 °. Today, in Turin, we can enjoy this wonderful combination of
flavours, intent on enhancing our region, while always keeping up high the characteristics of our
praiseworthy “Piedmont” cuisine”.
