Pollenzo: Università del gusto

At the end of the 1990s, at the request of Slow Food, the project  began to restore the big Agenzia complex, which now houses the Universita degli Studi di Scienze Gastronomiche, the Banca del Vino and the Albergo dell’Agenzia with its Ristorante Garden annex. The Carlo-Alberto complex in Pollenzo is a site listed as one of Unesco’s World Heritage ‘Savoy Residences’. The Universita degli Studi di Scienze Gastronomiche trains the new professional figure of the gastronome, who understands the production processes of foods from their agrarian and zootechnical origins, with particular attention paid to environmental implications and sustainability and their industrial transformation.
