Opera has many different meanings: manual work, craftsmanship, but also
art, be it a painting or a sculpture. It combines practicality and dexterity,
creativity and creativity. The chef Stefano Sforza proposes a clean, precise
cuisine with well-defined flavors. Without too many frills, frank and neat,
where “removing” is better than “adding” (as the teacher Gualtiero Marchesi
taught), because inserting an extra ingredient just for the sake of unsolicited
complexity is easy, while leaving only the right flavors is an attitude of the few.
