All of this stemsfrom the creativity of the chef who blends traditional dishes such as “spaghetti alla chitarra” with shrimpsand “botargo” of mullet, a tartare of sea urchins, scorpion-fish, St. Peter’s fish, and gurnard with daring butsucculent inventions of his own.
