Jamin in the Genoese dialect means “hard work”. Like the long process, started in 2013, to improve
the quality of champagne refining it in the bottle in an underwater cellar made where the pressure
from the bottle and from the outside are perfectly balanced. Here, in a heavenly and uncontaminated
enviroinment, the French Champagne Blanc de Noir Zero Dosage is left, and after at least 12
months it is “awaken” by the kiss of a sip on the glass. From France to the Italian sea of Portofino,
an itinerary of research and attention to details, for a product unique in the world, the -52 Cloe
Marie Kottakis Champagne Underwater is the first champagne in the world to bring back on the
label the term UNDERWATERWINECAVE.
